Stuffed Chicken Breasts
Prep Time: 15 Minutes Cook Time: 40 Minutes Servings: 2-4
2 chicken breasts from The Old Fashioned Farmstead, butterflied
1/2 cup mozzarella, shredded
4 ounces mushrooms of your choice, sliced
1 medium onion, sliced
fresh herbs, minced (we used rosemary, oregano, and thyme from the garden)
4 tablespoons butter
2 cloves garlic, minced
1/4 cup wine if desired
fresh ground pepper
-Heat oven to 400 F degrees
-Break up 2 tablespoons of butter and place on the bottom of your pan along with the onions, half the garlic, and wine.
-Place some of the shredded cheese on one side of each of the butterflied breasts, add some mushrooms, garlic, and another layer of cheese. Add the extra mushrooms to your pan with the onions.
-Fold one of the sides of the breast over the other as if you were creating a sandwich with the cheese and mushrooms inside. Secure with toothpicks.
-Place the stuffed breasts over the onions in the pan.
-Season the breasts with salt, pepper, and herbs.
-Top each breast with one tablespoon of butter and cook for 30-40 minutes.
