Chicken Parmesan

Prep Time: 10 Minutes Cook Time: 25 Minutes Servings: 2-4


Ingredients:

1-2 chicken breasts from The Old Fashioned Farmstead; butterflied

1 cup breadcrumbs

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1 teaspoon dried herbs of choice (if desired)

2 eggs from The Old Fashioned Farmstead

6 tablespoons butter

1 cup mozzarella cheese; shredded

salt

fresh ground pepper


Directions:

-Heat oven to 450 F degrees


-Combine breadcrumbs, onion powder, garlic powder, and herbs and mix until well blended.


-Scramble eggs in a shallow dish large enough to dip the chicken breast in.


-Salt and pepper both sides of the breasts.


-Melt 2 tablespoons of butter in a pan over medium heat.


- Dip each breast in the egg mixture, then the breadcrumbs to coat. Allow excess to fall off.


-Once all breasts are coated, place them in the pan and cook until golden brown. This will be about a couple minutes per side. Add butter as needed to keep the chicken from burning.


-Once golden brown move the breast onto an oven safe dish or pan. Top each breast with the shredded mozzarella cheese.


-Place the breasts in the oven until the cheese is melted and bubbly. This will take about 10-15 minutes.


-Serve with your favorite pasta and red sauce.
