Simple Chicken Fajitas

Prep Time: 10 Minutes Cook Time: 15 Minutes Servings: 2-4



Ingredients:

2 chicken breasts from The Old Fashioned Farmstead, sliced very thin

1 medium onion from your favorite farm, sliced

1 lime or any other sour citrus, cut in half

3 medium bell peppers from your favorite farm, sliced (any sweet peppers will do)

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon cumin

salt and pepper to taste

6-8 flour tortillas

your favorite toppings

*Feel free to play with the seasonings. Using more or less of something won't hurt you.


Directions:

-Prep and slice all of your veggies and chicken breasts.


-Mix all the dry seasonings together.


-Coat your chicken with juice from half of the lime, 1 tablespoon oil, and all the dry seasonings.


-Heat up about 1 tablespoon of oil on medium/high heat and cook chicken for 3-5 minutes. Remove the chicken from the pan and set aside.


-Add another tablespoon of oil and cook the peppers and onions. This will take about 5 minutes.


-Once the peppers and onions are cooked, you can return the chicken back to the pan to heat it up and combine.


-Serve on warm flour tortillas topped with your favorite goodies and fresh lime.


-Enjoy!
