Pure Leaf Lard
We use leaf fat from our pigs to make this lard. Our pigs are raised in the forest and supplemented with a certified ORGANIC & NON GMO feed that is locally milled.
The leaf fat is the fat that surrounds the kidneys and loin of the pig. Some folks consider leaf lard to be the highest grade of lard. It has a high smoke point so it is great for frying and pan searing. It is also prized by bakers for creating flavorful pastry crusts.
